A local brewery makes an excellent pumpkin beer that is almost perfect IMO. However when they serve it they rim the glass with cinnamon sugar and that just takes it to a whole new level. Maybe you could try something like that until the spice flavor shines through some more.

Maybe use a paint strainer bag around the end of your siphon? Would that work?
You may not get enough flow to keep the siphon going though.

I recently added Andes Candies to a brew. I made 5 gallons of the Deception Cream Stout and siphoned 3 gallons off into 3 separate jugs to do some experimenting. And in one of those jugs I tossed in 10 Andes candies and racked on top of them. The leftovers after bottling tasted really good...

For the cooling you just plug the freezer or fridge right into the outlet that is wired to the temp controller. No splicing required to the freezer.

Here is a picture of mine. STC is dual temp. Freezer plugs in to one side of outlet on back of the project box. The heater plugs into the other side. Then just lay the wires in and close the lid. Easy as pie.

You could use Dixie cups. I just use very small Tupperware containers and take a few minutes to weigh hops while water is heating up for the mash or the boil.
