    First time use of a wort chiller?

    We are on a private well. The water temp is fairly constant all year at around 55 Deg F. so no need here for an icebath exchanger, however you might find that you will save time and water, and its better for the beer to chill fast, like through a counter flow or plate chiller.

    Just thinking about the saison grain bill and what yeast to use. I have been using belgian saison wlp565, is there maybe a better yeast, I know this one seams to be fairly clean, wonder how it might respond to the acidulated malt if I use any.

    Lighter color and lower gravity, mixed fermentation and likely a longer traditional fermentation. Maybe I should use a berlinerviese (spelling?) as the base.

    Anheuser-Busch InBev Acquires Northern Brewer & Midwest Supplies

    As bad as NB and Midwest are in the shipping department maybe this will be good. But until I see a change I still won't be doing business with them, 10-14 days on an order is too long, And not only that, their UPS rates are through the roof compared to other suppliers that are equally far away...
