    Can i sell my homebrew at my brewpub??

    Brew it on the premises that have the brewers license, then your square with the feds. You would need a pilot brewery license if you were to brew at home and then sell in the pub. I say just scale it up and sell it as a seasonal, if no one likes it then don't make it again.

    is more always better with specialty grains?

    specialty malts all depend on the brewers taste. take a pilsner, many brewers will say only put 2 row german pils malt in, yet there are many recipes with one or two specialty malts in it. i say brew it how you like it.

    With the mash water at or above mashing temps, you can get dough balls by adding water to grain. It is generally advised that at temps above 140 or so, you add the grains to the water while stirring. Dough balls are bad for mash efficiency.

    Mash Temps and H2O Volume

    For a full grain brew that I do, I use 1.25qt/lb of grist. That should work for a mini mash too.

    what went wrong?

    My local homebrew shop made a pale with wormwood as the bittering agent. It is amazingly bitter, almost like bile. I would say it was the wormwood that is causing the extreme bitterness.
