    thats a very cool setup. the jack is ok, but i wouldn't hurt to put a metal tray right under it to catch any leaks just in case. what ton jack is that, 10?

    wild yeast strain

    Attempting to isolate a good wild yeast strain to create a delicious house hard cider. Left to right; half gallon with apple peels, one gallon with cranberries, the middle is my concentrated cider, next is half gallons left at 50 degress F, last is half gallon left alone.

    It wasn't a real calculated move. I just put the twenty gallons in a chest freezer and waited till they were solid and then thawed out. I believe they thawed fine, i tasted some of the concentrate and it was thick and heavy with sugar.

    Ice cider is going nut. at least 2-3 bubbles a second. I boiled the leftover down to one gallon.

    Im letting them thaw, then i will boil them down. The gravity of the concentrate was 1055, but there are two layers so i have to mix it around and take it again. But yea i agree, i hand made those 20 galons, i'd hate to see it go to waste.

    Room temerature worked fine, around 60 degrees. It took a total of 19 hours to thaw 20 frozen gallons until it filled a six gallon carboy. There was a decent amount of ice left, im letting that thaw all the way, then i'm going to boil it down and see how much im left with, I'll post some...

    yea, i wanted to put the jack under the cider, so it wouldn't contaminate if anything went wrong. Hands down its a much harder design than putting the jack above, but i think its worth it. And the holes are 3/16. i would do that design again, i'd say the pot is much stronger than most of the...
