    Can I get some input on putting the probe in a bottle of water vs in the open air? When I tried the bottle of water, it took the water way too long to cool / warm and I found there were bigger swings in the cooling / warming.

    Go stainless from the start. Buy as big as you can afford. I am not a fan of partial boils.

    Keep it in a dark closet for up to 3 additional weeks and try it again. Patience is the key to great beer. Don't "waste" bottles by Trying them too soon.

    I would put it in a place where it is out of the way and forget about it. Time heals most anything.

    I keep my kettle as still as possible during chilling and then use an siphon to rack into the primary. Most of the crud gets left behind.

    I had a buddy who made fireworks as a hobby. He helped me make a "marry me" sign out of fireworks. She wasn't at all prepared for the sudden pop and flash of light. It scared her at first. I have since divorced. For that I just let a lawyer tell her.
