Hi all! I'd like to make an imperial IPA with an OG of 1.083. I'm trying to create a recipe myself and am not sure what the proper yeast to use would be? What are opinions on Danstar Nottingham, Safeale US04 or US05, or any other recommendations? Also, if attempting to brew a beer with an ABV...

I have an IPA (Two Hearted clone extract recipe) in my primary that still has airlock activity at day nine. There's a bubble about every 3-4 seconds. I took a FG reading 2 days ago and it came in at 1.011 (OG was 1.055) and will take another reading tomorrow, but is this normal? Used Wyeast 1056...

Thanks guys! Maybe we'll try the recipe with the extract this time and then make our way up to the all grain when we've got a little more experience. either way, I'm excited!!

Haha, actually we did an Irish Red to practice, but our next batch is hopefully going to be a Bell's Two-Hearted clone! Although since we are still so inexperienced, we are trying to convert a recipe I found to malt extract rather than all grain... But I'm SUPER excited to try brewing an IPA now...

I've been trying to find out what Dayton, OH water's pH level is and am having a hard time. Anyone out there know? Or have brewed with Dayton tap water and have suggestions/advice? Thanks!!
