I just picked up a vial of whitelab's cream ale blend that i plan on brewing with in a week or so. has anyone had any experiences with this yeast that they care to share? one thing i am curious about is cold conditioning. i dont really have a set up to cold condition my beers at this point...
Just got back in to brewing about a year after moving into an apartment that doesn't allow me to use my outdoor burner. Just did a 2.5 gallon batch on my stove, but could only manage to bring the pot to a weak boil through out the duration of a 90 min boil. How worried should I be of dms?

The beer turned out good. I also wound up dry hopping with another oz of the Tahomas. I wouldnt say there was anything new that that stood out about these hops. Theres some woody/earthiness with some faint citrus notes on the nose. I could see using them in a hoppier blonde ale or maybe an...

I wound up sticking with what I had, and so far I'm pretty happy. I hit 1.060 for my O.G. and finished with a FG of 1.012. The beer tasted great going into bottles. Really nice balance between the caramel and roast flavors, and bitterness is right where I want it to be. Pretty excited to taste...

This beer turned out great. The Simcoe/Centennial combo provided piney/grapefruit notes and an overall pleasant bitterness. The German Ale Yeast ferments pretty clean, but gives a subtle fruitiness. The beer definitely benefits from an extra week of cold conditioning in the fridge after...
