Racking risks infection so the fewer the better. i rack twice. Once to a secondary for a month. Then let it sit for 1-2 more months in another carboy. Just make sure to use good sanitation habits.

I always use a secondary! That said is is not a must. i do so to get a clear beer. I have trasferred my beer two to three time to clear it up. It is really about personal perference!
