    E-Herms Build

Its not been an issue. I had the same concern but the whole system itself is big enough that you end up just being more comfortable with the overall size of the thing. Never having to worry about leaks has been a serious bonus.

    Recipe for an Imperial Red

I would second pretty much everything in here. The C-120 is going to leave you with too many sugars that will not ferment, I would be concerned with it being cloyingly sweet both from the C-120 flavors and the residual sugars. That C-120 is 10.6% of your entire grain bill - which is a LOT. I...

    Labeling some Sours

Thanks a lot guys. This was a fun experiment and all of the feedback has been positive so far.

How to get the most flavor out of your fruit additions?

10lbs of raspberries in how many gallons? I only have experience with raspberries being added to sour beers, but I used a ratio of 2.5lbs of raspberries per 1 gallon of beer and it produced incredible raspberry flavors. At the same time though, sour beers are dramatically different and if I...

    Storing Hops in Vacuum Jar

1 - Yes. 2 - I have not used that product but I do use regular mason jars with a vacuum sealer to store my hops. I have hops that are 3 years old that still produce great IPAs. 3 - They can stick together, but it is easy to break them apart so this is not a problem. Good luck. Also, dont be...

    Labeling some Sours

Back in January 2013 I brewed my first sour beer. Last month I finally got around to bottling it. I had split up the 12 gallons into 2 gallon batches with different fruit added. This is definitely the longest I have ever waited to package a beer so I figured why not actually label it up and...

    Russian Imperial Stout recipe critique

I think your recipe looks good. Its pretty close to the %'s I use for my RIS. I use 75.2% Base malts, 14.1% Roasted/Chocolate Malts, 7% Crystal Malts & 3.5% Flaked. It comes out pretty dark, but tastes awesome. The best part is it develops extremely well for years. Brew it!! Here is last...

How long will my hops last in the freezer?

I have pellet hops in my freezer that are 3-5 years old. I keep all of my hops in either vacuum sealed bags or vacuum sealed mason jars - both with silica gel oxy absorber packs inside. I buy bulk lbs from hops direct, niko brew, hop shack, etc. I wont say that the 5 year old hops are quite...

    1gal Strawberry Wheat

I would also choose the citra. Next time though, get some el dorado hops and you will supercharge the strawberry flavors.

    Firestone Walker Easy Jack

I just listened to the Firestone Walker Holiday show on the brewing network where Matt talks about Mandarin Bavarian being the dominant hop in this beer - I also purchased a bit of it and through it in an extra 2.5 gallons I had on a recent brew day. It is remarkably similar to the aroma of...

    E-Herms Build

Im not sure if I mentioned it in this thread or not, but the corkboard thing didnt work out like I had hoped. The unfortunate thing is that there is always going to be liquid making its way out of the kettle in one form or another, and with soft wood like I used its a bad setup. I switched...

    Red Color Flanders

    1. Boil time was 2 hours. 2. Mash was a single step @ 158F for 90 minutes, 15 minute mash out @ 168F. We actually fermented it with US05 for the primary ferment which was the first time I have used dry yeast in 8 years - it tasted awesome. Racked to a used wine barrel with a sour blend.

    Red Color Flanders

Well, from my experience you can use small %'s of Carafa Special III to add some red to your beers. I use that in my Vienna Lager to push the color to red from a dark orange. At the same time I just made a flanders red base using the Wild Brews recipe which is: 50% Vienna 20% Flaked Corn...

Belgian Dark Strong Ale The Pious - Westvleteren 12 style quad - multiple

I get the idea of culturing and that brett has a longer shelf life, but still if you are using something that can be purchased for less than $10 and pitching it into something that will sit for 9 months, Id place my money with the new purchase rather than the old. I dont see the point.

Belgian Dark Strong Ale The Pious - Westvleteren 12 style quad - multiple

How long ago is a while? If you are going to let something sit on brett for 9 months it would probably be a good idea to pick up a new vial with fresh yeast considering the cost is so low. Also, people will point out Brett flavors are not within the style definitions of this beer, especially...
