    It doesn't really matter. However, if you get a crazy fermentation that spews out through the air lock, the three piece is much easier to clean :)

    I didn't touch the side of the tank during the boil, so I'm not sure if it was cold or not. However, I am in AZ, and it was around 105F outside while I was brewing. I'd think that would be enough to keep it warm?

    It might be due to the specialty malts. Those have more unfermentable sugars. Use fewer specialty malts, and see if that helps.

    For your grain bill, that is way too much crystal malt. No more than 5% of the malt should be crystal malt for an IPA. I would also use 0.25-0.5# biscuit, 1# might be overwhelming.

    Anyone brew 5 gallon batches on your kitchen stove?

    I have a small gas stove and use a heat stick to achieve a rolling boil. I do 5 gallon batches and usually start with 7 gallons of preboil volume.

    I have a 5 gallon glass carboy. I was planning on doing a normal month-long primary at 65˚F, bulk age, rack on to cherries, and bulk age some more. I want to use a combination of US-05 and Wyeast Lambic blend. There shouldn't be any acetobacter.
