    I am gonna mix this up tonight. At the Asian grocery tonight they had never heard of dried rice balls with yeast in them. They looked at me kinda weird. When I said "sake" they showed me this koji mold rice in the refrigerator section. I'll let everyone know how it turns out.

    I use brown sugar. Also cinnamon. And a wee bit of clove. If I want it sweeter I add lactose to taste in the bottling bucket.

    I have brewed 2 ciders, 1 pear, a JOAM, and a skeeter pee. Now I'm ready to get a little more adventurous. I want to do a cider with cranberry added in the secondary. The question is: at what stage of yeast activity in the primary do I switch to secondary? Vigorous activity? Wait till it's done?
