It's a really great place. You can sign up for a guided "hard hat" tour on Fridays but you have to book well in advance. Wisconsin loves spotted cow but you really can't beat Fat Squirrel.
Thanks for the advice. What do you think about racking onto honey once or a couple times? Also, if I wanted to keep a little sweetness in the wine could I rack onto a pound of honey and throw a few campden tablets in after a day or so?

Well I made a 5 gallon batch last night and I have another question.
After a few weeks could I rack onto a 1-1.5 lbs of honey? Would there be enough residual yeast in the secondary to push up the ABV and/or sweeten the wine?

I think I'm going to follow Mcwilcr's advice and steep a little longer. On subject off subject... Could you mini-mash using steeping bags? Once the 45/60min is up just pull out the steeping bags, rinse with sparging water and have the leftover wort... or would there be too much leftover...
