Welcome. I wish I didn't hate bottling (I keg) some much otherwise I would do small batches because I love brewing but hate all the other stuff too! :)
Sounds good to me. Do you have recipe for you hard cider or do you just use cider and yeast? What yeast? I am currently enjoying a batch of hard cider and I am going to put another 5 gallons in the fermenter tomorrow for a total of 20 gallons for the season. :) I want to try something a little...
if I was going to build a space saving brewstand I would model it after a TopTier but make the burners fold up to save additional space. However, that looks pretty cool. I just don't like the idea of getting out the ladder to mash in. I've spent enough of my life on a ladder.
How long has it been in the primary? I would not stir it with a spoon, if you feel the need to agitate the wort simply swirl the wort around in the carboy.
This the recipe I have used for the last couple years.

They are 50ml bottles. Sure you can find them cheaper than this somewhere though.

I would add the honey and orange peel to the end of the boil at 0 minutes, so that they will retain their flavors otherwise the will just be boiled off.
I can my fresh pie pumpkins for the beer the following year. I like to start my pumpkin ale in mid August so that it is ready for the beginning of October, but there are no fresh pumpkins ready. So last year I began canning them for use the following year it works great.
