    Controling hot break boil over

    15 gallon kettle. I usually start at 12.5 gallons, but have pushed it up to 14 and been ok. I have been using it for years and have never had a problem with head retention of any flavor introduction at all. Someone mentioned chemicals. It is silicone. Very inert.

    Most likely over carbonated. I have done it several times. Forcing it quickly makes it fairly easy to overdo it. Once it is dissolved, it is surprisingly difficult to get it out. You can't just vent and be done with it. You need to vent, shake it around a bit, vent, Repeat several times...

    They are the exact same thing. Different people have historically used the different names. Caramel/ Crystal malt can add some caramel flavor. Also, very long boils at high heat can add a "kettle caramelization" to a beer. Even if you go past your target OG, you can always add water at the end.
