Thanks for the reply. I have the beer in a glass carboy and yes there has been a slight increase in the room tempterature. I have not taken a hydrometer reading but will do that next. Based on your reply I assume it's releasing CO2.

I bottled my first batch one week ago "American Amber" made from a kit. I had to open one and taste it today...couldn't wait. Nice head when poured into glass but the first taste was kind of sour-not pucker your mouth sour but it was detectable. Will it improve with age or is it infected?

I bottled my first batch last Sunday and now a week later I noticed that most of the bottles have only 1/2" to 3/4" of headspace. I assume I am going to have very low if any carbonation.
What are my options to fix this?
