Just realized I never posted after the brew. Manifold worked great! I think it cleared the wort faster than the braid did, but it could just be that the braid had degraded. Either way, very happy with the results.
I also noticed I never mentioned we upgraded to a plate chiller on this setup...
I went with the camlocks because it kept things simple and let me move the hoses around quickly. I'll admit it can get a bit busy shuffling connections on brew day, but it's good enough for me.
Time for an update. We've mangled the mesh screen in the MLT from stirring the mash. I decided to try making a manifold instead of replacing the screen.
Here's what it looks like now. Took a couple of hours to make using a hacksaw and CPVC. Going to brew with it next weekend.
I used to top off with bottled water from the fridge. Not as cold as ice, but less prone to contamination. You could go as far as freezing a gallon jug, but that's not easy to work with.
Your temperature should be fine. Different strains of yeast like different ranges, but you're in prime ale territory. I ferment most of my ales around 64.
