    Buckwheat Honey....

Hahaha... great input guys! Saved me from probably a mistake. Maybe I should get a small jar and add just a couple oz. per gallon with other honeys? Luckily I've found a few places locally to get a good variety of different honeys. Found a place not far from home that sells a gallon of...

    Buckwheat Honey....

I think I may get a 3lb jar and make a 1 gallon batch. If it tastes a little off early on, I'll just stick it in the back of the closet for a year or two. ;)

    My first Mead

I could comment that if you used 9lb of honey and 3 gallons of water, you made it a little on the weak side. 3lb of honey per gallon means total volume, not 3lb of honey PLUS 1 gallon of water. You may need to back sweeten a bit, but I'll defer to those with more experience. I'm a noob at...

    Backsweeten with honeystix?

Bum link, man. But it looks like those are just plastic tubes with honey in 'em... at least if I'm reading the description correctly.

    JAOM's Bread Yeast's Bad Rap

I wondered these things, too. And since I had to buy a six pack of those little boxes of raisins, I'm wondering if I should use some of those for nutrients. My first two batches are going, one is a JAOM with an orange and raisins... the second is a melomel with blackberry, and teaspoon of a...

    Buckwheat Honey....

I started my second 1 gal batch of mead a couple weeks ago using some canned blackberries (no preservatives, just blackberries in sugarwater) and 3lb of Walker's Honey from Texas. It has a nice chocolaty note which I think should end up interesting with the blackberries. Anyway, I checked...

Strawberry Mead from welch's frozen concentrated juice??

I'm a bit new myself, and am interested in the responses. I'd figure if it's all natural, I'd give it a shot. I'm wondering about how much per gallon you'd want to use, since it may end up sweetening it a lot if it's very concentrated or has sugars added.

Mead for people allergic to wine?

Sorry for continuing off topic... I've been in Austin for about 20 years... allergies didn't start hitting me much until maybe 5 or 6 years ago. All of it bugs me, but ragweed and cedar are usually the worst. Mold only mildly annoys me. And most of my symptoms are nasal anyway. Thanks...

Mead for people allergic to wine?

I have allergies myself... I think I'm allergic to just about EVERYTHING that grows outside in Central Texas. Well, one remedy that gets mentioned often is to consume honey made locally. Well, I'm going to take this even further - I'm going to brew mead using local honey and drink a lot of...

    1st attempt @ Mead

What Tweake said. I have allergies - I'm allergic to just about EVERYTHING that grows outdoors around here - so I'm going to try to make my mead using local honey, preferably raw. Maybe if I drink enough.... aaaaaa-CHOOOOOO!

    store bought mead

Chaucer's is definitely not worth it. Smells like PVC and doesn't taste much better. Let me know what you find at that Specs! It's kinda on the way over to my parent's house, so I can swing by there some weekend.

    1st attempt @ Mead

I'm new to mead myself, but in all the looking around and reading I've done, I've never seen the use of propolis, royal jelly or polin (did you mean pollen?). Mostly it's just honey, water, yeast and nutrients for a traditional. Not sure what you'd get out of the other stuff.

    Sweet Mead Activator Wyeast ACT4184

Dang, I bought a packet of that yeast and originally intended to make a large batch melomel, but seeing that the fruit would cost a ton, I figured I'll just make a 5gal batch of traditional sweet mead with it. I'll wait until I receive Schramm's book (should be in my mailbox any day now!) and...

    Joe's Ancient Orange Mead

This is pretty much the first 1 gal batch that I started on Sunday. Bubbling away now! I'm going to get a few more 1 gal bottles and airlocks and try some different recipes, then probably take my 6.5 gal bucket to start a 5 gal batch of traditional.

Ben's Ancient Blueberry Mead (Shameless Ripoff)

Hmm... maybe another recipe I should try in a small batch, since I'm planning on getting more 1 gal bottles to try a variety of recipes??
