After 3.5 weeks in primary and then a few days in the fridge prior to kegging, the taste had what I think is an estery/fussil aftertaste (I'm not really sure how to describe the flavor). It was not a clean finish as I'd expected from a Kolsh yeast.

I have a bag of RAHR 2-row that I plan to use for the base malt instead of the Maris Otter pale malt. I'm reading that the Maris Otter has a bit more "biscuit" character to it compared to a generic 2-row.
Any thoughts on adding anything else to make up for the difference in these base malts...
Oddly enough, both the S-04 and S-05 finished out at a 1.020 gravity. A bit higher than I had expected (especially for the 05), but, not too far off Yuri's estimation. The S-05 version tastes a bit drier, but, the S-04 tastes better coming out of secondary. We'll see how they settle out after...
If you add during the boil (as suggested), you'll end up with a heap of trub that will likely be difficult draw down efficiently -- I'd add some extra allowance for that. If you add during the mash, I think the pumpkin is fairly water neutral after the sparge.
