    I'm about to bottle a beer, and I stopped by a local co-op today to pick up some caps. The container had bags of "Oxygen absorbing" caps and "regular crown caps"...I've never seen bottlecaps with distinctions before, so I bought a bag of both to be safe.     6 days into fermentation and bubbling has stopped, took first hydro reading. Was at 1.010, and tasted great. Letting it sit for 4 more days, then bottling.

    Wow, that's some wicked fermentation! Just a newbie question: I've never used the blowoff tube before, but can it be just jammed through the small hole in the top of your fermentation bucket or does it really only work with a carboy? Thanks in advance.

    Too much evaporation

    Trust me, it's baffling me too lol. This is definitely a first. What's worse is that my hydrometer broke and I haven't replaced it, so I couldn't add water based on any gravity readings, simply did it blind.

    Belgian stout, WTF?

    Your mash temp seems to me to be a bit low. Bumping it up to anywhere from 152-155 would bring out sweeter aspects of the malts, perhaps toning down the bitterness a bit. Just an idea, others may disagree.
