    The blow off tube should eliminate the possibility of a dry airlock.

    1. Swap out the airlock for a blow off tube. 2. You can add water post-boil to lower the SG. 3. Let the yeast do their thing and let the FG end up where it ends up. It will probably finish up close to where you thought it would.

    Homebrewing slump...

    I am also suffering from a slump. I've only brewed once since last spring. Hot summer, new baby, and new house have eliminated any energy and free time I used to enjoy. I'll be brewing outside at the new house but I've been tossing around the idea of building a brewing station in the garage...

    It's probably fine. The CO2 that is being produced is pushing everything out of the carboy so nothing should be going into the beer. Again, anecdotal experience, not science.

    darn it, first AG and over shot mash temp!!!

    Could just be the yeast is not done. If it doesn't budge after a couple days then you'll know. Include your mash temp and tasting notes in your brew book so you know for next time. Maybe it'll taste better than if you'd hit your temp.

    I don't have any scientific answer but my anacdotal experience says you'll be fine. Put your blow off tube on and enjoy the wait.

    You know you're a homebrewer when you're looking at buying a house but start eliminating houses because there's no room that can be dedicated to brewing..... Sadly, I'm still going to be stuck in the garage.... until I build a shed in the backyard! Think my wife will mind?

    Feud between my two local breweries

    Non-compete clause in an employment contract could prevent it. I'd rather drink "ok" beer with good people than the "best beer ever" with not good people.

    Brewing consistency and a newbie brewer.

    If it's one you really like, brew it again before you run out. Having one ready as a backup is nice because you can see if there are any differences from batch to batch.

    Habanero Peppers?

    I add 1 pepper per gallon plus 1 or 2 to secondary fermenter for a few days- week. I remove seeds and soak in vodka first.
