    newb irish red ale question

    This was also the first batch I ever brewed; way back in January. It was okay, a little sweet for my taste but that leads me to my first bit of advice: Let it sit. At LEAST 4 weeks before bottling. Very hard to do, especially on the first batch...I couldn't do it but I did put some bottles...

    That's what I wondered. I had heard on the brew strong podcast that the oak flavor starts to fade after it comes off the oak; have you found this to be true at all or is it just more of a mellowing?

    Do all extract kits have a similar taste?

    Try making some very small changes and see what it affects maybe, before making any huge changes. For instance, maybe try a batch with bottled water instead of tap?

    Yeah, it does seem a bit off I agree. But out of everyone that drinks this, me and maybe one other person get the reference...so I try to keep it relatively simple, matching letters and what not. ie. the Byakhee Brown Ale in the primary right now. I also like to find a Lovecraft (or related)...
