Who says it is always pure?

If you aren't using food grade co2, then at least make sure you are using a filter. Otherwise, I would be worried about an infection.

Checked my lambic type beer two weeks after brewing and it looks like I have some nice green mold. Should I just dump this batch?

This is my first attempt at capturing some wild yeast. Has anybody seen anything similar to this before? I'm thinking its probably just mold but i'm not sure. The starter hadn't shown any activity since exposing it to the air about five days ago, but this appeared when I checked it this morning.

I read something on another forum about priming with a can or two of apple juice concentrate. Has anyone here tried something like this?
