Just finished my second brew... Holiday Ale came out perfect! Final gravity was at 7.8% ABV. Little strong on the orange side, but I think it will mellow out after a week or two of additional conditioning...
So, I made a batch of Amber...first time brewing. I accidentally left the trub in the fermenter with all the beer. Well not accidentally I guess, but I missed that part in the instructions. I basically think I got a good beer considering that only after a week of conditioning I tried another...
I didn’t do that, but will from now on... it stayed steady at 212F when the water was boiling...I live in Virginia on the eastern shore at sea level, so 212F equals boiling here. Thanks for the tip, I’ll make sure I do that before hand!
I’m just a beginner... I used the Brewers Best recipe for Holiday Ale. I just followed the instructions, I added hops after I was done steeping, wort returned to a boil and broke... I boiled for 40 minutes then added more hops for the final 15. I did an Amber (first time ever Brewing) and left...
Yeah, but I think me not pouring down the side added to the pronounced head... I tend to think that how airtight your primary fermenter is...adds to some carbonation. Just a guess, but it kind of makes sense.

No doubt! I’m going to try my best to be as patient as possible. From reading, I’ve learned the higher the gravity, the longer the wait in fermentation and bottling. I love stouts, I can’t wait to finally make my own, I just know the wait will be excruciating!!!
