@MusicalBrewer Sorry for the late response. Yes I went with option #2, works just as described - as long as your wire the switches correctly. Here's a picture of the finished interior.
Thanks for posting this, I used your design to make a sparge arm for my 10 gallon Home Depot cooler. The only difference being I needed a camlock connection to the sparge arm, which goes through the top of my mash tun. Here's the pictures:

Where did you get your Convoluted Counter Flow Chiller from? Or did you build it?
