    Home Pasteurizing (no, really)

I read about someone pasteurizing beer before. They heated the bottles in water to 60c for 20 minutes. That temp may be a bit high. I would do more research on that. But it is VERY important to not let the bottles touch the bottom of the pot. This would put "heat shock" on the bottles and...

Results of my first in-bottle pasteurization experiment!

I've read about this being done in Brazil. One thing they stressed is to put some sort of "riser" under the bottles. It is very important to keep the bottom of the bottles from touching the pot. This would put the bottles in direct contact with the heat source. Try using a steamer tray (or...

Results of my first in-bottle pasteurization experiment!

Just a thought. I read about this being done in Brazil. They stressed in putting some type of "riser" in the heating pot so the BOTTLES DO NOT TOUCH THE BOTTOM OF THE POT. This may be some of your problem. The bottoms of the bottles are getting much hotter than you intend due to the direct...

Prime with other types of sugar!

What about Karo syrup? I have a recipe (Malzbier from Brazil) that calls for 304gr or 10.723oz of Karo syrup to prime 5 gallons. This beer is VERY sweet! (It is for my wife.... OK.) Am I in the ballpark with this one? It is supposed to carbonate the beer AND leave a very sweet aftertaste.

    Brazilian "Malzbier" recipe to homebrew

Thanks again (obrigado), iasquith. I went ahead with the recipe you were kind enough to give me earlier. It is happily in the primary fermenter. The OG turned out to be 1.055 so I think I am OK so far. I guess that my only question left is for the priming sugar. The local brew store seems...

    Brazilian "Malzbier" recipe to homebrew

I have just about finished the recipe. I have one question for anyone..... The original recipe calls for 8 grams of Karo per 500ml of beer to carbonate and add the sweet flavor to the beer. For 5 gal (I rounded to 19 liters) that would be 304gr or 10.723 oz of Karo. I know that yeast will...

Thank you everyone! I am going to get my wife to translate that recipe and see how it reads. I will post it back here for further comments. Thanks again.

    Brazilian "Malzbier" recipe to homebrew

Thanks, VTBrewer. I appreciate the suggestions. Malzbier is a very SWEET beer. ( I think that is why she likes it.) It is similar to Xingu but even sweeter if you can believe that. Anyone else have anything?

    Brazilian "Malzbier" recipe to homebrew

My wife is from Brazil and I would like to surprise her with her favorite beer, a Malzbier. In Brazil, the two most famous brands are Antarctica and Brahma. (She prefers the Antarctica.) The Brazilian Malzbier is similar to the German Malzbier but the Brazilian has approximately 3.5% to 4%...
