    What have you added to Cider?

    Has anyone added sugar-free caramel syrup after their cider has fermented dry? It sounds like a great way to add the caramel flavor without having to back sweeten/stove-top pasturize.

    Oh yeah, the rum is delicious. It's a spiced rum that is slightly sweet--maybe the sugar reacted badly with the oak chips? Hard to say.

    I don't know what particular brand they were, just French Oak Chips from my LHBS--never had any issue with "off" ingredients from them before. The rum was Tortuga Spiced Rum that I got in Grand Caymen.

    I'm excited to try this recipe next weekend, though I'm considering boiling 1/2 to 1 gallon on the apple juice with a packet of mulling spices before adding it to the fermenter.
