Very vigorous fermentation & Off flavors/odors?

You might be right, I don't have a probe in my fermenter, but I have a digital thermometer with a probe that is on a wire which I put against the carboy. So it probably is measuring somewhere between room temp and fermentation temp...I hadn't put that much thought into it, but that is a good...

Very vigorous fermentation & Off flavors/odors?

I know there's no way for any of you to know exactly what I'm smelling so I'm really just asking for thoughts here. I brewed an extract red ale using safale - 04 yeast. I always make a sarter and it was going well when added it to the primary. Well the fermentation temp was at the high end of...

    Maltodextrin - amounts and when?

I'm curious to get some input on this. I'm brewing a 5 gallon batch of fruit (cranberry) ale. I'm using a recipe that I have tried previously and found it to lack a little body. I was thinking of adding some maltodextrin but am not sure how much...this will be my first time using this. This was...

    Fruit flavorings/concentrates - Boil?

Thanks for all the replies...maybe I'll just wait to add it to the Keg instead...That's easy enough. I know I shouldn't add an extra question to my existing post but it's along the same lines. This is a cranberry flavoring...any thoughts on amount? I don't want to overpower the beer, but I do...

    Fruit flavorings/concentrates - Boil?

I'm doing a fruit ale with a fruit flavoring/concentrate and am getting ready to rack to secondary...then a question hit me (better late than never I guess!!!) How do I sanitize the concentrate? Should I mix it with some water and boil for a few minutes or is this even necessary? Thanks in...

"Clearer" fruit ales (i.e. other than wheats)

Thanks Walker, that's what I thought, but figured I better ask before I really messed up. Has anyone tried a Red Ale with cranberry? It sounds interesting.

Beer is good!!! (The Buffalo Theory)

One afternoon at Cheers, Cliff Clavin was explaining the Buffalo Theory to his buddy Norm. Here's how it went: "Well ya see, Norm, it's like this... A herd of buffalo can only move as fast as the slowest buffalo. And when the herd is hunted, it is the slowest and weakest ones at the back...

"Clearer" fruit ales (i.e. other than wheats)

I'm always trying to introduce more people to "good beer" i.e. micros, brewpubs, and of course and arguably most impotant my homebrews. :D I'd like to take a cranberry ale home for Christmas...I know, I'm cutting it a little short...but it will be kegged so I can shave a little time...

New Kegging equip - before 1st use???

I'm new to kegging my brews (tired of bottling!!!), and had a question regarding new kegging equipment. I have cleaned the keg itself and have a batch ready to be pressurized. The CO2 tank, regulator, and hoses are all brand new. Do I need to do anything to them before I hook everything up? I...

I can't be the only one from Colorado!!!

Since I don't have any of my own brews ready yet, I'm having a "real" Fat Tire right now! Yea, it's pretty stinkin' good. I actually used to live in Fort Collins, CO, right down the street from New Belgium Brewing. Nice tour... :drunk: I see they are hosting an AHA Rally on the 25th of this...

    Less Hops in full boil?

I think I've lost control of my post!?!? :p No worries, it's an interesting conversation. I ended up going with about 2/3 of the bittering hops (and left the finishing hops alone). Was I close on my 1.041 wort? I figured that wouldn't be too far off, but what was the "correct" amount when...

I can't be the only one from Colorado!!!

Hey mezman, thanks for the post. Yea, I'm not big on the high IBU's either. Dude, how'd that Fat Tire clone turn out? Mine just went to the bottles Saturday.

    Less Hops in full boil?

Thanks for the input. And sorry, I forgot to mention the beer...it's an Enlish Brown Ale. The recipe says the O.G. should be 1.040-1.048.

    Less Hops in full boil?

I'm a newbie and am brewing my second batch toady. I understand when boiling the full 5 gallons, you are supposed to reduce the hops. If the recipe calls for a 2 gallon boil, how much should I reduce the hops for a full 5 gallon boil? Thanks in advance.

    No smoking debate

Actually there is evidence of an increase in disease in non-smokers who live in smoking households over those from non-smoking households (which are exposed to the same environmental conditions). Passive smoke does contribute to health issues, that is not "BULL Sh$t". I do agree that your...
