    Saison Cottage House Saison

    We drained 10 gallons of this in the course of 2 months. We were all in agreement we liked it best green, but it's awesome either way. This is going to become our "house beer" it was so loved and drinkable in any situation.

    Brewed 10 gal of this 9 days ago. Followed the original recipe. I have been taking samples along the way and it's been sitting at 1.002 for two days. Can one taste the difference between 1.002 and 1.000. I'm getting Short on patience and want to get this kegged. The samples taste awesome!

    Did you have an airlock on it? If it showed any CO2 pressure I'd leave it in bulk until it didn't anymore. The worry for headspace is oxidation but if there's still CO2 present there will be no oxidation. But yes, I would say you don't absolutely need more yeast.

    How much head space are you talking? If your conditioning that long I would say absolutely let it ride without adding yeast. My 2 pennies.

    A little update in regards to needing to add yeast at bottling: I bottled this 3 weeks ago I think. I ran out of 750 ml bottles and ended up bottling a dozen 12 oz bottles. Got ansy and open one this weekend. No head yet but a go ptsssss when I cracked the bottle. I did not add any new yeast and...

    I bottled mine last night that was brewed in April. It's been on oak spirals that were soaked in jack Daniels and let dry. The taste test last night shows incredible potential. A bit hot right now. Think it came out at around 10.5%. Used normal priming sugar and didn't ad any yeast. Suggestions...

    I have a bunch of hops in varying degree of size/stage. But there is a big group (30-40) of comes that are this size and have the lupulin inside ( assuming that's what it is). Should I harvest these?
