    Gose and Salt

    So just an update on this beer. I added 30g of salt, 3lbs of raspberry purée, and soured it up with a tbs of lactic acid. The end result is a phenomenal home brew that could easily be mistaken as something brewed in your local brewery.

    Kolsch Yeast

    I ferment my Kolsch at about 55 degrees, raise the to 62 for a diacetyl rest, I'm not sure if it's necessary, then I crash it just like a lager. The beer turns out true to Kolsch form. I have put my Kolsch up against professionally brewed US Kolschs and mine is better!

    Not a fan of White Labs, I've been brewing for 8 years and I've had better success with wyeast and dry yeast.

    And if vodka extracts more flavor, do I still need to leave the beer on nibs for 2 weeks? Or can I just pour in the whole think wait a few days?

    Why a week is that just to extract more flavor from them? I'd think the vodka would sanitize them relatively quick. I'm using vodka because I don't want to add Rum flavor to a beer that I'm also adding Bourbon soaked cherries.
