    New Product! Cool Brewing Fermentation Cooler

    Finally got around to trying mine. Works GREAT!! Kolsch is actively fermenting in the basement at 55F with two 1gal jugs of ice.

    Brett and Bottle....or Bulk Age, Brett and then Bottle

    Remember that Brett can be incredibly attenuative, so if you add it at bottling, be sure to compensate for the amount of priming sugar. If you plan on aging for any significant time, you could end up with some nasty bottle bombs as the Brett works its way through any and all remaining sugars.

    clove flavors?

    4-Ethylguaiacol, which is the phenolic compound that we associate with the clove aroma in beer, can be produced by Saccharomyces (particularly in wheat strains), but is often a product of Brettanomyces. Could be an intrusion of native yeast?

    What do you keep your yeast starter in?

    I start with a 1000ml flask, but step it up to either a 1/2gal or 1gal jug. The jugs are cheap and easy, the only reason I use a flask to start is the flat bottom.
