    That's a very good price, but it's a 110V system, it will take a long while to get 6-7 gallons to a boil. I think the PID controller is fine if you are ok with manually running the system which is what I'm doing now. How hard is it to change the temperature? You push up or down.

    The worthog controller is really nice, I'd say the biggest difference would be the kettle quality, and the use of triclamps in the Colorado brewing setup, it's really top notch. Also the overhead lift is built in so you don't need to add anything to get going. If you are looking at 10G batches...

    Like others have said, water chemistry does impact taste. RO water has no minerals in it. Do some research on Bru-N-water or simliar spreadsheets and you'll learn about putting some of those minerals back in. And yes, all grain has a meatier richer flavor IMO.     Dry hopping

    Yes if you use pellet hops it turns into a job filtering them out when racking. I prefer bags with weights as you initially mentioned. Now you will probably have to get some kind of nylon panty hose or something similar to pull over your racking cane.

    I have been doing hop stands between 175F-180F with the zero minute addition. Then dry hopping with 3-4oz. I am drinking an Amarillo pale right now, closer to 5.5% ABV.
