Hello, if you're worried about plastic buckets being oxygen permeable, just put your fermenting bucket into a larger plastic bucket with a higher rim and all the CO2 evaporating from your fermenter will drop over the edge into the larger bucket thus creating a CO2 blanket around your fermenter...
