What is the down side to using this method vs some of the tower-like setups using mash tuns and stuff? Is there one?

Well boiling will sanitize it really I believe, but I err on the side of caution and sanitize mine anyway just in case you know, i've already got a bucket o sanitizer sanitizing other crap, why not toss the bag in there for good measure
