No chiller just hose water through 1/2" copper to a 3/4" valve then through the chiller. Only problem is I think it's getting it too cool. I have had much longer lag times on the last couple of brews since I started using the new plate chiller.

I agree that it would be very easy to jumper around the thermo, but would warn you to make sure the defrost timer is still in the circuit. That way you reduce the risk of freezing the evap coils and making the thing a luke-warm beer despenser.
