Ive always had great luck with it 1 tablespoon to 1 cup of water boil5 minutes then add to the wine while hot ive seen results in 24 hrs every time but u may still have to filter to get rid of a haze

U dont need it unless u r making a fine wine there will be a pectic haze and even filtering wont get rid of it it if u r just making wine to drink then u will b ok without the pectic enzyme

I user green peaches with a batch and it turned out just fine i say go for it
