    ECY on love2brew.com right now!

Thanks for the heads up! Usually I monitor the twitters and find out that way but nothing for this round. I almost feel a little bad since this is the second time this year I loaded up on Bug Country, love it :ban:

    Favorite Yeast Bay Strains

Saison blend + brett for sure! One of the best beers I've made and it got a blue ribbon. The Dry Belgian Ale is also great, just be careful as it's an attenuation animal. I thought the Wallonian Farmhouse was OK but I only made one beer with it so take it for what it's worth.

Hop pellets in a muslin bag?

Using a muslin bag is definitely an option. If I'm making a higher IBU beer I'll use one to keep the amount of trub down. For low IBU beers I don't bother with the bag since there isn't much hop material. Using a bag isn't going to help your clarity though, just reduce trub. I'd suggest cold...

Saison yeast activity dropped off after short/weak fermentation.

Yeah, I'd check the gravity as it's probably done. 3711 is one if my favorite yeasts and it always finishes real quick for me. Sent from my iPhone using Home Brew

    yeast bay cell counts

I wouldn't worry about it, I always under pitch my Belgians. About a month ago I did a 1.056 wort and pitched this blend, it performed wonderfully and was down to 1.007 after two weeks. The latest sample has a nice bright citrus smell and the taste has a good funk, the website description is...

Brett/Sach Blend - to secondary or not

I'm using one of the new big mouth 6 gallon glass carboys. Since I do 5.5 gallon batches plus my OG was a little high so I diluted there isn't a whole lot of headspace. I've opened it once to check the gravity but that's it. Gravity was 1.07 and I'm expecting it to get a bit lower, shooting for...

Brett/Sach Blend - to secondary or not

A couple weeks back I made a saison and pitched the Yeast Bay Saison/Brett blend at 70F. Boy did that vial smell awesome and the fermentation has been great as well! I wanted to let the Brett work for a while, keeping it at 70F, to develop flavors. But at this temperature should I worry about...
