Festbier Bee Cave Brewery Oktoberfest Ale

Brewed this about 6 weeks ago. Fermented at 58 F for about 4 weeks with Wyeast Kolsch yeast, then cold crashed for 2 weeks at 36. Just forced carbed a few days ago. This turned out delicious! Malty but very well balanced and very smooth, very drinkable lager-like profile. A highly recommended...

    Sweet Stout Deception Cream Stout

So I force carbed the all grain recipe of this for 1 day, then let it sit at 11 psi for 4 days. It is already definitely my favorite beer I've ever made, I know it will get even better with age but I really don't see it lasting very long. I'm getting the ingredients and brewing this again...

American Pale Ale Bee Cave Brewery Haus Pale Ale

Just brewed this up the other day and its bubbling away! Used original grain bill, but cascades I had we're lower in %alpha so added a 45 min addition and subbed the 5 min to Amarillo. Pitched dennys fav 50...and then I forgot to take a gravity reading...drunk... lol can't wait to try it!!

    Sweet Stout Deception Cream Stout

Ok guys brewing this up when I get the yeast, maybe in a week or so. Scaled the recipe up to 5.5 gallons, and to match my average efficiency ~65%. Upped the bittering charge just a tad. Also added some flaked oats for some additional mouthfeel/body. Plan on having it in primary for about 4...

All late-addition IPA (Simcoe, Amarillo, Citra)

Just brewed this on Sunday. My actual mash temp ended up being 154, and my boil was only 75 minutes because I spilled some of my sparge water (on my HAND-ouch.). OG was 1.064. Yeasties had me scared for a moment but fermentation started showing signs this morning. We'll see how it turns...

    Second IPA recipe, critiques?

Wow that sounds interesting! Good luck with it. And as for the label...lol I'll do my best. (Hope she doesn't remember we're kegging this batch)

    Second IPA recipe, critiques?

Hey guys, trying to create my own IPA. Reading Daniels' "Designing Great Beers", so that hopefully helps. Also trying to learn from my first attempt, which turned out ok with much room for improvement. Also trying to get the most out of some great hops in my freezer. Any opinions/suggestions...

    Eductor (venturi) vs. air stone

The past few batches I have, don't know specifics on how much oxygen (ppm) it adds, but it seems to work very well. I've always had fast, vigorous fermentation without even shaking the carboy. You might want to use a bigger carboy though, I had bubbles coming out the top of mine last time.

    To cold crash or not?

Hey all, wondering whether there is any advantage or disadvantage to cold crashing a porter before bottling? I know it won't make much difference in appearance but is there something else I'm missing?

    First IPA recipe, critiques?

Ok all, again, thanks for your advice. Plan on brewing tomorrow. To recap, I've adjusted the hop schedule with what I have on hand, altering the addition times for better use of flavor/aroma hops, while upping the IBU to 78.5 and bitterness ratio to 1.15:1. Hopefully I can score 1-2 oz's more of...

    First IPA recipe, critiques?

Guys thank you all very much for your advice. I should have noted grain is ground in the bucket, so there is no changing that at this point. Sounds like I'll have a malty sweetness to my IPA, which doesn't sound all bad. Actually hoped the victory may add a slight toasty biscuit flavor to the...

    First IPA recipe, critiques?

Designed my own IPA, first recipe I've designed ever. :D Planning to brew on Friday. Please take a look and leave comments. Hops may change slightly, depending on what my LHBS has on hand. I'll post updates as they come. Thanks. BeerSmith 2 Recipe Printout - http://www.beersmith.com Recipe...

English Porter Black Pearl Porter (AG)

Any advantage or disadvantage to cold crashing this while in the secondary? I didn't have the equipment to cold crash until my last beer, which was a Belgian pale ale (granted very light in color) but it seemed work very well. Thoughts?
