    Read about Jalapeno beer.. had to try it.

    ballast point habanero sculpin is amazing. I think pepper beers only are good when paired with large amounts of fruity, or citrus hops. and a dry DRY body. just my take.

    Mosaic pale ale grain bill thoughts.

    For the bittering addition id go with CTZ at 60 then back load the crap out of it with the mosaic. Probably add an ounce at 5 and an ounce at flame out. Depending on how much fruity flavors you want coming through. Then of course dry hop with the same amount. I'm just telling what works for me...

    Lacto starter question.

    I made a lacto starter with 1.5L OF 1.030 wort in a flask. Left it in my San Diego garage with foil on the top? Was I wrong? Or should I put an air lock on it since lacto don't like oxygen. It's been about 90-100 in the garage all day. Any tips or pointers??? Thanks! Sent from my iPhone...

    gonna just go with a berliner weisse with that kellerweis yeast. hopefully it turns out good. ill let everyone know. still would like inputs. just pitch lacto and pitch the keller a couple days afterwards. ill go with a vial of WLP677 go with a 1L starter for a couple days on a warm...
