Some folks have done an overnight mash with no issue, but they lauter & boil in the morning.
I'd be uncomfortable leaving my wort in a pot at outside temps, fridge maybe? I don't know how that would affect the finished product though.
Koch might be full of-sh** on this one BUT I did start drinking the yeast from my bottle conditioned beers and have never been happier.
I would wake in the AM with headaches even if I only had 1 or 2 homebrews. Then I noticed that my German step-dad would pour the yeast in his glass...
I attached mine to an old aquarium pump so i can pump ice water through it... food for thought. You could just fill up your sink; I use a cooler full of ice & water.

I'm confused, how are you using a plate chiller and whirlpooling? Could you explain your equipment and process? Are you whirlpoooling then pulling from a dip tube?
Asking because I will be going to a counterflow or plate chiller in the future.
