    sulfur smell

Though I have read that it's common with apples, I haven't had it so my knowledge on the smells isn't first hand, but... I have read that they will fade in time, and just a sulfur smell shouldn't be any type of infection I don't think. As they say with all home made wines and beers, don't...

    sulfur smell

It seems common when making different ciders or apple wines to get sulfur smells - people around here call them "rhino farts". They are seemingly inevitable sometimes, but there are things that can be done I think to reduce or eliminate them from the start: Did you use yeast nutrient? I have...

    Graff (Malty, slightly hopped cider)

Ok, I rehydrated and pitched the yeast late on Saturday night, and had some minor airlock activity by Sunday afternoon. By Sunday night, had bubbles every 3-4 seconds or so, and now on Monday morning the airlock activity is vigorous. OG was .162, and I will check the SG tomorrow night I think...

    Holy Crap. Agressive Fermentation

You may be right on that - I am about to embark on the same thing, also with S-04 yeast, but mine will have 2 lbs. of DME. I expect to have a completely different looking/smelling fermentation than the apple wines I have made that were only juice and cane sugar with champagne yeast. I will be...

    Holy Crap. Agressive Fermentation

They say the Graff recepie of Brandon O's can have extremely aggressive fermentation, and that is mostly apple cider along with DME added (as well as some other things)... Just a question to better understand (since I am about to go through a very similar thing as you)... You are fermenting 5...

    Graff (Malty, slightly hopped cider)

For me... I would still chill it at least slightly. Only thing I can drink warm is red wines and nitrogen-"carbonated" beers such as Guiness.

    Graff (Malty, slightly hopped cider)

I am no expert here, and have not made it yet, but if it is similar to commercial ciders then anywhere from slightly chilled to ice cold would do it depending on your preference. Thanks bootsy - I bought the ingredients, the LHBS had everything (he is VERY well stocked). Got Czech Saaz hop...

    Graff (Malty, slightly hopped cider)

Please forgive me if this is a noobish question, but what type of hops (leaf hops, pellet hops, or hop plugs?) would I want to use for this recipe? I only ever made wine-style cider before, and so using grains, malt and hops will be a new experience for me. I am very much looking forward to...
