Aha, that makes sense :D I read the entire post as a reply to my question.

Well, WLP500 isn't exactly a wheat yeast. It is the yeast Chimay uses, and according to wyeast it is suitable for Belgian Dark Strong Ale. According to Brew Like a Monk it can be used as high as 29 degrees Celsius (85 F). Chimay ferments up to 28 C (82F) with their dubbel.

How do you guys think this beer will be like with WLP500? I've brewed this exact recipe with WLP530 about a year ago, and it's fantastic! Just wanted to try something new :)

Weissbier Bee Cave Brewery Bavarian Hefeweizen

I brewed this recipe a while back using the 3056 yeast. It came out REALLY well. It is a beer that everybody seem to like, even the pilsner-only drinkers! I'm brewing a new hefe tomorrow, with the 3068 yeast, hoping to get a bit more clove and banana taste. So, my question is, what do...

I think Wyeast's numbers are just a guideline. You can usually ferment lower than recommended. You can of course ferment higher as well, but it would probably produce some off-flavors. With most of the belgian yeasts I think Wyeast are a bit conservative.

In the book "Brewing Classic Styles" it is recommended to ferment at 17 C (62,6 F) with the 3068 yeast. Anyone tried to stay around this temperature to see how it differs from 20 C (68 F)?

I've measured a dry stout (OG 1052) at 20 C (68 F) while the temperature in the room was 12 C (53,5 F)! So yes, the yeast can produce A LOT of heat!

Thanks for the fast reply! That sounds very good! I guess I should really be using the 3068 then, since I have made a temperature control chamber. What fermentation temp do you recommend for the 3056? The temperature I measure is the actual temp of the beer, not the environment temp. The...

Has anyone tried this recipe with Wyeast 3056? I'm brewing this right now, and since my supplier didn't have any 3068 I went with the 3056.

Yep, did that yesterday. Now it's removed from the yeast and sitting in a freezer set at 10 degrees c / 50 F. I tasted it yesterday and I couldn't even guess that a belgian yeast had been used, and it was extremely strong. Didn't taste alcohol, but you could feel it in a strange way. Do...

Belgian Dark Strong Ale The Pious - Westvleteren 12 style quad - multiple

My fermentation didn't go so well. I was expecting that the fermentation itself would bring the beer to nice warm temperatures, but I was wrong. I think it was at 22 - 23 degrees (celcius) at the most. I let it sit for three weeks in the primary, and when I measured SG today, it was 1012!! I...

My thought exactly ;) I was hoping to avoid pitching fresh yeast, I'm lazy. But do you think it's possible to use some of the yeast from the primary fermentation if stored properly in a sanitized container kept in a fridge?

    ebay aquarium temp controller build

I'm using this temp. controller which can switch between both heating and cooling. It works very well but I'm wondering if anyone here knows if it is possible to connect it to a computer in any way? I would like to connect it to a computer that can be run via remote desktop, since I'm not living...

Belgian Dark Strong Ale The Pious - Westvleteren 12 style quad - multiple

Brewed the New World recipe yesterday and everything went fine, and I have a question about cold conditioning. I'm not going to keg this because I would like to keep a few bottles a year or so to see how it will age. Is it possible to bottle the beer after the primary fermentation, let it sit...
