    Wet Hopped Brown Ale / Amallia Hops

    Go for it. Use commercial hops for bitterimg and I would use 25% to 50% more finishing hops using home grown hops as they can be a bit "weaker" than commercial hops. But for a brown you might be fine with what the recipe calls for since browns don't have a bunch of hops in them.

    1 oz chips, one airplane bottle Jim Beam black, for a few days, the into secondary 6 days then bottle. Did this with a sweet stout, has nice oak flavor, and just the essesence of the liquor.

    Look up DMS and boilng wort. I think DME has DMS that you want to boil off.

    Relax, it will be fine. I run the hops right into the fermenter all the time. You have plenty of OG for a good beer. if you want to add some malt extract to make up the difference
