    Crabapple, pear, and apple cider

    Well the first tasting was very off. After letting it age more it has mellowed nicely. I checked back on my notes and I noticed that I left out I added some malic acid at bottling. It is very well carbed, and at 9% it has a smooth taste with a dry slightly bitter after taste.

    Mindenman, Thank you. I started the mixed fruit on batch 10/27 SG 1.068, secondary 11/20 SG 1.011, racked again 12/19 and bottled 12/29 FG 1.002, added 2 Tsp malic acid and 8 oz ajc. SG at 1.007 at bottling. Tasted in mid February. I will continue to wait.

    I made a crabapple, pear, apple mix and so far am very disappointed. It has no apple taste, very bitter. I added sugar to carb it and bottled. Carbed up good, tastes not good.

    I purchased a breville juicer off Craigs list and used to juice about 15 gallons. You have to give it a break and stop and clean it out some every few gallons. Worked great.

    Cider - juiced my own apples. Second batch I ever made. Bottled 12/10. Still not carbed enough. Tastes great.

    Second attempt at cider!

    I have used the same yeast. It depends on your temp. After pitching yeast my house dropped to 66 F. Took almost 4 days for activity on air lock. I am still doing primary in a pail, if you can do it in glass you will see activity sooner, before the airlock is working.

    More sugar would have to be added to get your SG up, in turn giving you a higher potential alcohol. If your not getting a high enough reading add more sugar and retest until you reach desired number. Do this prior to fermentation.

    I use a breville juicer, purchased off Craigs list to make cider. I just started brewing this fall and used this juicer to make more than 14 gallons so far. Next I will be juicing some pears.
