Homebrew Recipes from my Commercial Brewery!

These are great. Love the brew sheet as well. Just enough detail. Question though. Looks like your doing a rising step mash without gelanitizing (so?) the grains. How does that work for you (or others)? Does the ondea pro ceramix negate the need for that step?

Latest Favorite and Next Brew Plan

Go BIAB electric. It's a game changer. Brew outside when convenient, brew inside when you want to. Set specific temperatures and walk away if so desire. Etc.

Latest Favorite and Next Brew Plan

Right, but notice how wide the margin is. For example the difference between the min/max for ondea pro is over 600%. Thats basically like them saying ¯\_(ツ)_/¯ we dont know how much to use... you figure it out. Or for SEB L, which i use frequently, where they say on a 15 pound mash that you...

Latest Favorite and Next Brew Plan

What’s strange to me is how little the suggested dose is compared to what people typically use. I wonder if the suggested dosage is for a different usage. As in they were used in production of X before GF brewers coopted them. I can’t imagine using 1ml in a 5 gal batch and getting good results...

    Fermentation Schedules?

Sure does. I have a Speidel which i Love. The problem isn't equipment related its the reality of being a father/grad student/having a, now, high importance job.

    Fermentation Schedules?

Thanks @apache_brew. Your comment "Don't worry about X number of days for anything. Worry about temperature, gravity readings, and taste. " is very interesting since that was what i was going for. I think i will just stick to my set it and forget it 10-14 days in primary since Im terrible...

    Fermentation Schedules?

I think i asked my question poorly. I want to know what sequence of temperatures/lengths that others have used with success. Also if anyone knows of a good resource for reading up on the effect that fermentation temperature has on beer that would be appreciated. For example the past few brews...

    Fermentation Schedules?

Does anyone have a good general purpose Ale fermentation schedule (or specifically for a brown ale)? Im dedicated to figuring out how to setup my inkbird temp controller for an automated schedule so i can have more repeatable results instead of "it was cold for a bit then i turned it up after a...

    Mash Temps importance

I got this one: bayite BYT-7A015 DC 12V Solar Hot Water Heater Circulation Pump https://www.amazon.com/dp/B01G305PK0/ref=cm_sw_r_cp_api_i_XzbFFb5NYNH8R I’ve had it about six months and it’s worked admirably through all my mistakes. I was impressed by how much wort it can move. I have to cycle...

    Mash Temps importance

I also went electricfor a variety of reasons and I can tell you that recirculating is absolutely key. Most of the electric kettles like the the M+B are tall and skinny so the temp difference between top and bottom can be upwards of 10 degrees. No bueno. You don’t need a super expensive riptide...

    Double yeast pack question

Okay last question as part of this. Part of the decision was somewhat made for me due to some circumstances. I pitched one pack on Monday but now im wondering whether I should open the fermentor and pitch the other pack or just leave it alone. So far it seems to be chugging along fine. Ive...

Demystifying Enzymes in Brewing - ZT Club Meeting

Silly, how can we find out when the meetings are? I’d love to attend one sometime but it looks like the website hasn’t been update in a few years. Is Facebook the main/only way to get Zero Tolerance info? Is there a dial up bulletin board I could use? Or a pigeon? Chaps

    Double yeast pack question

Can/should you make a starter from dry yeast? Usually the package says to just dump it in without rehydrating. But short answer is no i'm not making a starter as i dont have the equipment to make a starter. Chaps

    Double yeast pack question

I’m brewing a higher gravity beer that calls for a double starter. But since I’m using dry yeast I figured I would just use two yeast packs. Should I put them in at the same time or use them separately with a few days in between? Both methods make some sense. Thanks, Chaps
