The brewbuilt uses standard size triclamps which is nice. The brewbuilt conicals are very nice. The mini uni is nice in that it can cool a wider range of volumes, like 5 and 10 gallons. Often a half size ferment does not rise to the jacketed area to get cooled.

It also helps to recirculate for a couple of minutes before turning on the element. It gets the flour in the mash and not on the element. I figured this out the hard way.

This is exactly what I do and I do not have oxidation in my hoppy beers for months.

Control fermentation Temps, even a glass carboy in a fridge, will be huge. Then o2 free transfers. After that it is controlling mash temps. That can be fine with just a cooler like you have now. Or, I cheap 120 volt rims system.

Bobby m has extra wide stainless worm drive clamps that works great. And they are not that expensive.

They work much better with the digital gauge replacement. I use one bitter an in line pressure reduced for one of my taps, for British style beers.

This is correct, it protects the compressor and the compressor will keep up with your fermenter once the pump kicks on.

Correct, you do this while it is not under pressure. If at no pressure your gauge does not read zero then doing this should bring it back down to zero. Non oil filled gauges are open to atmospheric pressure changes so they don't need this. Oil filled are sealed, so this needs to be done every...
