    Cider likes it cold...but

    not often that it's is warmer here in Canada that most of the US. We are at 5'C here in Calgary today. Everything east of here is at least -30 though. Damn cold.

    Non-carbonating sweeteners for ginger beer(soda)

    I use pure sucralose. Tastes good and won't kill my dog (unlike xylitol). About 1.2g per 20L batch.

    My dry-cider-fu is weak. Suggestions?

    That makes a lot more sense. Calculating TA is a little beyond me, so I stuck with the taste test. Knowing what TA I like would make it pretty easy to standardize though, interesting. At least now, hopefully no one will make cider so acidic that it eats through their pint glass.

    Are you sure about this? I've added malic acid to a couple of ciders I made using Sun-rype apple juice and I ended up adding about 1 tsp to an entire 20L keg to bring the acidity up. I'm not sure how much that weights, but it is a LOT less than 120g (which is what 6 g/L works out to in 20L). I...

    I don't think you could reliably reach 1.000 if it is producing glycerin. But give it a go, I'd be curious to see what happens.
