My last batch was a hefeweizen and the initial fermentation period happened overnight. For the next 3 days I didn't see a single bubble so I took a reading and found the gravity had dropped by .045. I used a different yeast that I can't remember off the top of my head... the beer ended up at 6% ABV

I conducted a little experiment... I separated 2 bottles from the rest of the bunch and put one In the window and the other in the fridge. I did a blind taste test and the bottle in the fridge tasted the best after 3 weeks.

The range is impressive! I haven't used a liquid yeast pack yet but I'm gonna have to look into using this in the future.

Bottling day and my hefeweizen finished with a final gravity of 1.010 (started at 1.055) around 6%. The banana notes are very strong and overall I'm happy how it tastes. I'm bottling conditioning this, but after a couple of hours bottling I'm seriously considering a keg. My wife is fermenting...

No it didn't come with a hydrometer but I've looked into one and will probably get it with my next kit. Their site lists the beer at 5% but it's definitely got more of a kick to it than that.
