Saison with some prairie artisan ale dregs. Took a month for these beautiful bubbles to appear but I'm enjoying the 5 gal of non-funkified version of this.
You might add some rice and/or lactose to mimic the horchata flavors. There's a lot of sweetness in the BM beer that you might not get with that grain bill.
What temperature do you plan to mash?
Just got a second fridge with freezer on top and want to convert the fridge section to a fermentation chamber. Has anybody had success with putting the temperature controller on the fridge but maintaining freezing temperatures in the freezer section?

When you say there's no bubbling do you mean in the liquid your blow off tube is running into? It looks like there was/is a healthy kreusen and the yeast were doing their job.
Have you taken a hydro reading?
