    Hey Gary, Maybe it was an issue of inadequately mixing the wort. I used a liquid malt extract, and the total quantity of grains was 7.1 lbs so that should be sufficient fermentables. Anyway, we'll see how it goes. Thanks for the post

    Valid question Jaybird. I guess I added the irish moss out of habit but I see your point. A good weissbeer should be cloudy for the full wheat effect and flavor, so why try to clarify the beer with irish moss. Hmmm. Live and Learn ! Thanks for the pointer.... Andy

    After some more research I think you're right about the malt level being light. Not sure why based on the ingredients, but I have my fingers crossed that the yeast can still do it's thing in the next day or two. I'll let you know how it goes.
