    This is for 5 gallons right? I think you're going to need more hops. Willamette is pretty subtle to begin with too.

    Respectfully disagree. For me the reason homebrewing is so fun is that you can do whatever you want! ESBs are such a classic style, it almost makes it more fun to mess with them.

    Black India Style Saison Recipe

    Just a comment on the yeast. I just made a very simple extract saison using 3724 that fermented in the high 80's/low 90's. After 5 weeks the gravity still hasn't quite dropped to my liking yet. Patience, young grasshopper.
