Just wanted to say that Topaz is awesome! Just used it in a hoppy NZ wheat beer and it turned out quite delicious.

Find a yeast with a lot of diacetyl. None come to mind at the moment.

I absolutely love the combo of Northern Brewer and Willamette in Porters and Stouts.

I definitely think this beer might be "better" in conjunction with other hops but the point is really to show off the Apollos. When would you add honey to get the most from it. Chilled wort before pitching? During fermentation?

Respectfully disagree. For me the reason homebrewing is so fun is that you can do whatever you want! ESBs are such a classic style, it almost makes it more fun to mess with them.

Just a comment on the yeast. I just made a very simple extract saison using 3724 that fermented in the high 80's/low 90's. After 5 weeks the gravity still hasn't quite dropped to my liking yet. Patience, young grasshopper.
